- Line 9-inch cake pan with 2 layers of plastic wrap, leaving extra plastic wrap to hang over all 4 sides and cover cake. Set aside.
- Beat heavy cream, Finishing Sugar and vanilla in medium bowl with electric mixer on high speed until stiff peaks form.
- Spread about 1/2 cup whipped cream into bottom of prepared cake pan. Place a single layer of cookies over top, breaking to fit as needed. Spoon one third of the remaining whipped cream over cookies and sprinkle with Finishing Sugar. Repeat layers using remaining cookies and whipped cream, ending with cookies on top. Cover with plastic wrap and refrigerate at least 6 hours or overnight.
- Remove plastic from top of cake and invert cake onto large freezer-safe serving platter. Carefully remove plastic wrap and place cake in freezer about 1 hour or until firm enough to slice. Cut into slices and sprinkle with additional Finishing Sugar to serve.
