Ingredients
- Lemon Vinaigrette
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 tablespoons snipped fresh chives
- 1 tablespoon McCormick Gourmet™ All Natural Flat Leaf Parsley
- 2 teaspoons McCormick Gourmet™ Global Selects Mediterranean Herb & Salt Blend
- 1 1/2 teaspoons McCormick Gourmet™ Organic Thyme Leaves
- 1 teaspoon minced garlic
- 1/2 teaspoon McCormick Gourmet™ Organic Coarse Ground Black Pepper
- 1/2 teaspoon McCormick Gourmet™ Organic Crushed Rosemary
- Bean Salad
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 cup diced tomatoes
- 3 tablespoons grated Parmesan cheese, divided
INSTRUCTIONS
- 1 For the Lemon Vinaigrette, mix oil and lemon juice in small bowl with wire whisk until well blended. Add chives and seasonings; mix well. Set aside
- 2 Mix beans and tomatoes in large skillet. Cook on medium heat 5 minutes or until heated through, stirring occasionally. Remove from heat. Add Vinaigrette and 2 tablespoons of the Parmesan cheese; mix lightly
- 3 Sprinkle salad with remaining 1 tablespoon Parmesan cheese before serving
