- 8 Whole Avocado's
- Olive Oil
- Stubb’s Bar-B-Q Spice Rub
- Stubb's® Spicy Barbecue Sauce
- 1 pound Shrimp (Peeled and Deveined)
- 16 ounce Colby Jack Cheese
- 8 pieces of bacon. (Cooked crispy and chopped into bacon bits)
INSTRUCTIONS
- 1 Set up grill for medium, direct heat.
- 2 Slice avocados in half and remove the pit. Make a few deep cuts inside the avocado, but not thru the skin.
- 3 Lightly coat the inside of the avocado with olive oil and sprinkle with Stubb’s Bar-B-Q Spice Rub. Do the exact same with your shrimp.
- 4 Grill shrimp for about 2 minutes a side. Coat with Stubb’s Spicy Bar-B-Q sauce and cook for another 2 minutes. Remove from grill and chop into pieces. Set aside.
- 5 Grill avocado's on medium heat, flat side down. Grill for about 5 minutes or until you have a nice char on the inside of the avocado.
- 6 Once the avocado's are charred, flip over and fill with shrimp and cheese. Cook covered for approximately 5 minutes or until the cheese is melted.
- 7 Add crispy bacon to melted cheese. The melted cheese helps hold the bacon in place. If you have any extra shrimp, add on top. Remove from grill and serve.
