Ingredients
- 2 medium plum tomatoes, roughly chopped
- 1/2 cup chopped white onion
- 1 medium cloves garlic
- 1 1/2 cups water
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 cup long grain white rice
- 1/2 package (1 ounce) El Guapo® Dried Peeled Shrimp
INSTRUCTIONS
- 1 Place tomatoes, onion, garlic, water and salt in a blender container. Blend until smooth. Set aside.
- 2 Heat oil in large deep skillet on medium heat. Add rice; cook and stir about 1 minute until fragrant and golden brown. Stir in tomato mixture and Shrimp. Bring to boil. Cover. Reduce heat and simmer 15 minutes or until rice is tender. Garnish with chopped fresh cilantro, if desired.
