- 1/4 cup vegetable oil
- 8 (6-inch) corn tortillas, cut into 1 1/2-inch pieces
- 1/2 cup finely chopped white onion
- 1 small jalapeño pepper, seeded and finely chopped
- 5 large eggs
- 1/4 teaspoon McCormick® Ground White Pepper
- 1/2 teaspoon kosher salt

- 1 Heat oil in large deep skillet on medium-high heat until shimmering. Place tortillas in oil in single layer. Fry until golden brown and crispy on both sides, stirring occasionally, about 5 minutes. Remove tortillas using slotted spoon; transfer to paper towel-lined plate. Keep warm.
- 2 Add onion and jalapeño to same skillet. Cook and stir on medium heat until softened, about 3 minutes.
- 3 Whisk eggs, white pepper and salt in medium bowl. Pour into skillet and stir gently. Cook 30 seconds. Add tortillas, stirring gently to mix. Cook 2 to 4 minutes longer or just until eggs are set. Serve topped with chopped tomato, chopped avocado, cilantro and crumbled queso fresco, if desired.
