Ingredients
- Spicy Tomato Sauce:
- 1 pound plum tomatoes, cored and coarsely chopped
- 1/2 cup chopped white onion
- 2 medium cloves garlic
- 1 tablespoon white vinegar
- 1 teaspoon Whole Oregano
- 1 teaspoon El Guapo® Ground Arbol Chili Pods (Chile de Arbol Molido)
- 1/4 teaspoon El Guapo® Ground Black Pepper (Pimienta Negra Molida)
- 1 teaspoon kosher salt
- 1/4 cup water
- 1 tablespoon vegetable oil
- Tortas:
- 4 birotes salados, split lengthwise and toasted or baguette, cut into 4 pieces, split and toasted
- 1/2 cup refried beans
- 1 pound Carnitas
- 1/2 cup pickled red onion
- Lime wedges, to serve
INSTRUCTIONS
- 1 For the Spicy Tomato Sauce, place all ingredients except vegetable oil in blender container. Cover. Blend on high speed until completely smooth. Heat oil in medium saucepan on medium heat until shimmering. Carefully add tomato sauce mixture; bring to simmer. Reduce heat; simmer until slightly thickened, about 5 minutes.
- 2 To assemble Tortas, spread refried beans on bottom half of split roll. Divide carnitas and pickled onions evenly among rolls. Replace top half of roll. Place Tortas on serving plates; ladle Spicy Tomato Sauce over top until completely covered. Serve with lime wedges.
