Ingredients
- 5 cups prepared mashed potatoes
- 1 egg
- 1 1/2 cups shredded Monterey Jack cheese, divided
- 3/4 cup flour
- 1 cup Crispy Jalapenos, divided
- 4 green onions, finely chopped
INSTRUCTIONS
- 1 Preheat oven to 400°F. Mix mashed potatoes, egg, 1 cup of the cheese, flour, half of the Crispy Jalapeños and green onions in large bowl.
- 2 Spray mini muffin pans with no stick cooking spray. Fill cups with potato mixture. Top each cup with remaining cheese and Crispy Jalapeños.
- 3 Bake 15 to 20 minutes or until set and tops are golden brown. Let stand in pan 2 minutes before serving.
