Ingredients
- 1 1/2 pounds salmon fillet, 1 inch thick, divided into 4 portions
- 1 tablespoon butter
- 1 salt and pepper to taste
- 1 cup FRENCH'S® Potato Sticks, lightly crushed
- 1 tablespoon Lemon juice
- 1 tablespoon fresh thyme
- 1 teaspoon lemon zest
- 1 teaspoon minced garlic
INSTRUCTIONS
- 1 PLACE salmon pieces on greased shallow baking pan. Brush with butter; sprinkle with salt and pepper to taste.
- 2 MIX potato sticks, lemon juice, thyme, lemon zest and garlic in small bowl. Press mixture evenly on salmon pieces.
- 3 BAKE at 350°F for 20 min. or until salmon flakes easily with fork. Cover fish with foil if topping becomes too dark during cooking.
