- 3 pounds red potatoes, cut into 3/4-inch chunks
- 1/4 cup Sweet Onion Stone Ground Mustard
- 2 tablespoons cider vinegar
- 3 tablespoons vegetable oil
- 3/4 teaspoon salt
- 1/2 teaspoon McCormick® Coarse Ground Black Pepper
- 1/4 cup chopped fresh parsley

- 1 Place potatoes in large saucepan; add enough water to cover potatoes. Bring to boil. Cook on medium heat 10 to 15 minutes, just until potatoes are tender. Drain well; allow to cool slightly.
- 2 Meanwhile, mix Mustard, vinegar, oil, salt and pepper in large bowl with wire whisk. Add potatoes and parsley. Toss gently until well mixed. Serve immediately or refrigerate until ready to serve.
