- 1/4 cup flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup quick cooking oats
- 1 cup ricotta cheese
- 2 eggs
- 1/4 cup milk
- 1 tablespoon lemon juice
- 1 tablespoon sugar
- 1 tablespoon McCormick Gourmet™ Organic Cinnamon & Nutmeg with Chia Seasoning
- 2 teaspoons McCormick® All Natural Pure Vanilla Extract
- 2 tablespoons butter
- 2 Granny Smith apples, peeled and finely diced
- 1 cup apple cider
- 1/4 cup firmly packed brown sugar
- 1 tablespoon McCormick Gourmet™ Organic Cinnamon & Nutmeg with Chia Seasoning
- 2 tablespoons cornstarch
INSTRUCTIONS
- 1 For the Pancakes, mix flour, baking powder, and salt in medium bowl. Whisk to combine. Add remaining ingredients, mix just until fully combines. Let sit 5 to 10 minutes.
- 2 Drop by 2 tablespoonfuls onto non stick skillet or griddle (spray, butter or oil optional) over medium heat. Flip once the tops bubble. Cook until golden brown. Repeat with remaining pancakes.
- 3 For the Apple Pie Compote, melt butter in large saucepan over medium heat. Add apples. Cook and stir about 10 minutes, or until apples are tender. Add remaining ingredients. Cook and stir 5 to 10 minutes or until slightly thickened. Serve immediately.
