Ingredients
- 2 pork tenderloins, (about 1 1/4 pounds each)
- 4 1/2 teaspoons McCormick Gourmet™ Jamaican Jerk Seasoning
- 2 tablespoons vegetable oil
- 1/2 medium pineapple, peeled, cored and cut into 1/2-inch chunks (about 1 1/2 cups)
- 2 medium ripe avocados, peeled, pitted and chopped
- 1/2 teaspoon lime zest
- 3 tablespoons fresh lime juice
- 2 tablespoons finely chopped fresh cilantro
- 2 cups chopped lettuce, such as butter or romaine lettuce
INSTRUCTIONS
- 1 Preheat oven to 425°F. Pat pork dry with paper towels. Rub evenly with Jamaican Jerk Seasoning.
- 2 Heat oil in large oven-proof skillet or Dutch oven on medium-high. Add pork; cook until browned on all sides, about 6 minutes. Transfer skillet to oven.
- 3 Roast 18 to 20 minutes or until desired doneness. Let rest 5 minutes before slicing.
- 4 Meanwhile, place lettuce in large bowl. Add pineapple, avocado, lime juice and zest, and cilantro; tossing to mix well. Season with salt and pepper to taste. Serve alongside sliced pork tenderloin.
