Ingredients
- 2 Cornish hens, about 1 1/4 pounds each
- 1 tablespoon olive oil
- 1 teaspoon McCormick Gourmet™ Sicilian Sea Salt
- 1/2 teaspoon McCormick Gourmet™ Organic Coarse Ground Black Pepper
- 1/2 cup fig preserves
- 1 teaspoon McCormick Gourmet™ Organic Crushed Rosemary
INSTRUCTIONS
- 1 Preheat oven to 425°F. Brush hens with oil. Sprinkle evenly with sea salt and pepper. Place hens in foil-lined shallow roasting pan. Roast 30 minutes
- 2 Meanwhile, mix preserves and rosemary in small microwavable bowl. Microwave on HIGH 15 seconds or just until preserves soften. Brush hens evenly with preserves mixture
- 3 Roast 15 minutes longer or until hens are cooked through, brushing every 5 minutes with remaining preserves mixture
