Ingredients
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 plum tomatoes, seeded and chopped
- 2 teaspoons Berbere Seasoning Blend, (see separate recipe)
- 4 cups packed chopped kale leaves, (about 1/4 pound)
- 1 cup chicken stock
- 2 tablespoons lemon juice
INSTRUCTIONS
- 1 Heat oil in medium skillet over medium heat. Add onion; cook and stir 3 to 4 minutes until softened. Stir in garlic; cook 1 minute or until fragrant. Stir in tomatoes and Seasoning Blend. Cook and stir 8 minutes.
- 2 Add kale, chicken stock and lemon juice. Bring to a boil; reduce heat. Cover and simmer 10 minutes or until kale is softened.
