Ingredients
- 1/2 pound multicolor carrots, cut into 1-inch chunks
- 1 pound sweet potatoes, peeled and cut into 1-inch chunks
- 1 cup cherry tomatoes, halved
- 1 large red onion, sliced
- 2 cups cauliflower florets
- 2 tablespoons vegetable oil
- 2 tablespoons Berbere Seasoning Blend, (see separate recipe)
- 1 teaspoon McCormick® Sea Salt Grinder
- 2 tablespoons chopped fresh parsley
INSTRUCTIONS
- 1 Preheat oven to 450°F. Toss vegetables with oil in large bowl. Sprinkle with Berbere Seasoning Blend and salt; toss to coat. Arrange vegetables in single layer on large foil-lined shallow baking pan sprayed with no stick cooking spray.
- 2 Roast 35 to 40 minutes, stirring halfway through cooking, until tender and golden brown. Sprinkle with parsley before serving.
