Ingredients
- 1/4 cup olive oil
- 2 large onions, thinly sliced (about 5 cups)

potatoes, peeled, quartered and thinly sliced

- Idaho potatoes, peeled, quartered and thinly sliced
- 1 tablespoon McCormick Gourmet™ Cajun Seasoning, divided
- 1 1/2 cups chicken stock
INSTRUCTIONS
- 1 Preheat oven to 375°F. Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 to 10 minutes or until lightly browned
- 2 Place half the potatoes in even layer in greased 12x8-inch baking dish. Sprinkle with 1 1/2 teaspoons of the Cajun Seasoning. Top with a layer of half of the onions. Repeat layers of potatoes, onions and remaining Seasoning. Pour chicken stock over top
- 3 Bake 45 to 50 minutes or until potatoes are tender. Let stand 5 minutes before serving
