Ingredients
- 1 tablespoon oil
- 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
- 1 package McCormick® Organics Chili Seasoning Mix
- 1 large sweet potato, cut into 1/2-inch chunks (about 2 cups)
- 1 can (14 1/2 ounces) petite diced tomatoes, undrained
- 1 1/2 cups chicken stock
- 1 medium apple, cored and cut into 1-inch chunks
INSTRUCTIONS
- 1 Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until lightly browned.
- 2 Stir in remaining ingredients. Bring to boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally or until sweet potatoes are tender. Serve with desired toppings.
