Ingredients
- 1 tablespoon oil
- 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
- 2 cups chopped carrots
- 1 cup thinly sliced celery
- 1 cup chopped onion
- 1 teaspoon McCormick Gourmet™ Organic Thyme Leaves
- 1 leaf McCormick Gourmet™ Organic Turkish Bay Leaves
- 4 cups unsalted chicken stock
- 1 cup chopped spinach leaves
- 1 tablespoon McCormick Gourmet™ All Natural Flat Leaf Parsley
INSTRUCTIONS
- 1 Heat oil in large saucepan or Dutch oven on medium heat. Add chicken; cook and stir 8 to 10 minutes or until cooked through. Add carrots, celery, onion, thyme and bay leaf; cook and stir 5 to 8 minutes or until onion is softened. Add stock; bring to boil. Reduce heat to medium; cook 20 to 25 minutes or until carrots are tender
- 2 Remove from heat. Stir in spinach and parsley. Season to taste, as desired. Remove bay leaf before serving. Ladle into soup bowls
