Ingredients
- 1 package Simply Asia® Curry Udon Seasoning Mix
- 1 cup water
- 1 tablespoon less sodium soy sauce
- 2 tablespoons oil, divided
- 1 pound boneless chicken thighs or breast, cut into 1-inch cubes
- 3 cups assorted cut-up vegetables, such as carrots, broccoli, bell pepper or green beans
- 2 cups Simply Asia® Japanese Style Udon Noodles
INSTRUCTIONS
- 1 Whisk water, soy sauce and Seasoning Mix in small bowl. Set aside.
- 2 Heat 1 tablespoon of the oil in large nonstick skillet on medium-high heat. Add chicken; stir-fry 3 minutes or until no longer pink. Remove from skillet. Heat remaining 1 tablespoon oil in same skillet. Add vegetables; stir-fry 3 minutes or until tender crisp. Return chicken to skillet.

Stir sauce mixture. Add to skillet. Bring to boil on medium heat, stirring constantly. Add noodles, tossing to mix. Stir-fry 1 minute or until sauce is slightly thickened.
Test Kitchen Tips: Also great with pork, shrimp or tofu. Serve over rice in place of the noodles, if desired.
