Ingredients
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1 cup long grain white rice
- 2 cups Simply Asia® Vietnamese Inspired Pho Beef Broth
- 1 cup matchstick carrots
- 1 cup frozen shelled edamame
- 2 tablespoons finely chopped fresh cilantro
- 5 lime wedges
INSTRUCTIONS
- 1 MELT butter in medium saucepan on medium heat. Add onions; cook 2 to 3 minutes or until translucent. Add rice; stir to coat well with butter.
- 2 STIR in broth and carrots. Bring to boil. Reduce to low; cover and simmer 16 to 18 minutes or until rice is tender and has absorbed all the liquid. Remove from heat.
- 3 PLACE edamame on top of rice; cover. Let stand 10 minutes to heat edamame through. Fluff rice with a fork. Garnish with cilantro. Serve rice with lime wedges.
