Sichuan Stir-Fry Rice Bowl

Ingredients

  • 1 package Simply Asia® Sichuan Stir-Fry Seasoning Mix, divided
  • 3 tablespoons oil, divided
  • 1 pound boneless chicken breasts, cut into 1-inch cubes
  • 3 cups assorted cut-up vegetables, such as bell peppers, green beans, broccoli and carrots
  • 2 tablespoons less sodium soy sauce
  • 2 tablespoons water
  • Cooked rice

INSTRUCTIONS

  • 1 Heat 1 tablespoon of the oil in large nonstick skillet on medium-high heat. Add chicken and 1 tablespoon of the Seasoning Mix; stir-fry 3 minutes or until no longer pink. Remove from skillet.
  • 2 Heat remaining 2 tablespoon oil in same skillet. Add vegetables; stir-fry 5 minutes or until tender crisp. Return chicken to skillet.
  • 3 Add remaining Seasoning, soy sauce and water to skillet. Stir-fry 1 to 2 minutes, until heated through. Serve over cooked rice.

    Test Kitchen Tips: Also great with pork, shrimp or tofu. Serve over noodles in place of the rice, if desired.
