- 1 tablespoon Vegetable Oil
- 2 cup buttermilk
- 1 pound Swordfish, or Alaskan Halibut, cut into strips, each about 3-inches long and 1/2-inch thick
- 1 pound apple smoked bacon
- 3 tablespoon Stubb’s Bar-B-Q Spice Rub
- 1 cup Stubb's® Sweet Heat Barbecue
INSTRUCTIONS
- 1 Put the buttermilk into a large bowl and add 2 tablespoons Stubb’s Bar-B-Q Spice Rub. Add the fish strips, stir to coat, and let stand for 20 minutes.
- 2 After marinating, gently wrap the fish sticks in bacon. One strip of bacon per fish stick. Heat the vegetable oil over medium-high heat in a medium sauté pan. Place the fish sticks in the pan and cook undisturbed for 2 to 3 minutes. Softly flip to fish sticks, browning each side. Sauté the fish sticks until each side is browned and crispy. This should take about 10 minutes. Let sit for 5 minutes. Serve with Stubb’s Sweet Heat Bar-B-Q sauce for dipping.
