Ingredients

  • Beer Bar-B-Q Chicken:
  • 3/4 cup Stubb's® Original Barbecue Sauce
  • 1/2 can (6 ounces) citrus IPA beer, such as 10 Barrel Brewing® Club Tread Mandarin IPA
  • 1/4 cup fresh orange juice
  • 1 tablespoon finely chopped fresh garlic
  • 1 teaspoon finely chopped chipotle peppers in adobo
  • 1/2 teaspoon McCormick® Ground Ginger
  • 3 pounds whole chicken wings
  • 1/4 cup vegetable oil
  • 4 tablespoons Stubb's® BBQ Rub
  • Cornbread Waffles:
  • 1 1/2 cups flour
  • 1 cup yellow cornmeal
  • 4 1/2 teaspoons baking powder
  • 4 1/2 teaspoons sugar
  • 1 teaspoon kosher salt
  • 2 cups buttermilk
  • 1/2 cup melted butter
  • 2 eggs
  • 1 tablespoon McCormick® All Natural Pure Vanilla Extract
  • 3 tablespoons finely chopped fresh chives, divided

INSTRUCTIONS

  • 1 Preheat grill on medium-high heat. Mix Bar-B-Q Sauce, beer, orange juice, garlic, chipotles and ginger in small saucepan. Bring to boil on medium heat. Reduce heat; simmer 5 minutes or until slightly thickened. Reserve 1/2 cup Sauce mixture for serving. Set aside remaining sauce for basting.
  • 2 Brush chicken wings with oil. Coat evenly with Bar-B-Q Rub. Grill wings 18 to 20 minutes or until cooked through, turning occasionally, and basting with remaining Sauce mixture during last 10 minutes of grilling. Keep warm.
  • 3 Meanwhile, for the Waffles, mix flour, cornmeal, baking powder, sugar and salt in medium bowl. Mix buttermilk, butter, eggs and vanilla in separate medium bowl. Add buttermilk mixture to cornmeal mixture, stirring just until blended. Gently stir in 2 tablespoons of the chives.
  • 4 Pour about 1 cup of batter into preheated waffle iron sprayed with no stick cooking spray, being careful not to overfill. Cook until light golden brown. Repeat with remaining batter. Serve hot cooked chicken wings on top of waffles. Drizzle with reserved Sauce mixture and sprinkle with remaining chives.
  • 5 Test Kitchen Tip: For some extra Stubb’s flavor, stir 2 teaspoons Bar-B-Q Rub into waffle batter.
