Grilled Scallop Skewers

  • Sea Scallops
  • Stubb’s Pork Spice Rub
  • Stubbs Sweet Black Pepper Anytime Sauce
  • Lemons

INSTRUCTIONS

  • 1 Set your grill up for direct, high heat.
  • 2 While the grill is heating up, place your fresh scallops on paper towel and pat dry. Insert 2 skewers into each scallop. This will help make it easier to turn the scallops on the hot grill. Once they are skewered, season each side of the scallop with some of your Stubb’s Pork Spice Rub. (This also works well with the Stubb’s Beef Spice Rub).
  • 3 Once the grill is ready, oil the grates with some canola oil as scallops can stick easily. Place the scallop skewers on the hot grates and close the lid. Toss a few lemon wedges on the grill as well. Grilled lemon adds some great flavor to all seafood. Do not touch the scallops for 4 minutes. Make sure that the flames are not reaching the meat of the scallop. After 4 minutes, flip the scallops and baste with some Stubb’s Sweet Black Pepper Anytime Sauce. Let them go for another 3-4 minutes. We do not want to overcook these as they will get rubbery. There is nothing worse than an overcooked, rubbery scallop. After 8 minutes total, remove from the heat, squeeze some grilled lemon juice over the top and serve immediately. Enjoy.
