- 2 pound flank steak or flat iron steak
- Stubb’s Beef Marinade (about 1/2 bottle)
- Corn or flour tortillas, taco size
- Mango, thinly sliced
- Red Onion (optional)
- Guacamole (homemade or store bought)
- Shredded cheese
- Tomatoes, chopped
INSTRUCTIONS
- 1 Marinate the flank steak in Stubb’s Beef Marinade at least 4 hours (preferably overnight).
- 2 Prepare the grill for cooking on high direct heat. Grill until preferred doneness (about 5-6 minutes per side for medium rare).
- 3 Allow steak to rest for 5 to 10 minutes, covered in tin foil.
- 4 Slice it thinly against the grain.
- 5 Fill corn tortillas with flank steak, sliced mango, red onion, guacamole, shredded cheese and tomatoes.
