- 1/2 cup Stubb's Beef Marinade
- 3 tablespoon whiskey
- 3 tablespoon prepared horseradish
- 1 teaspoon Dijon mustard
- 2 tablespoon honey
- 1 large shallot, finely chopped
- 1 teaspoon chopped fresh thyme
- 1 pound skirt steak, trimmed
- Ground pepper
- Salt
INSTRUCTIONS
- 1 Prepare your grill for direct high heat cooking.
- 2 In a small sauce pan, combine Stubb's Beef Marinade, whiskey, horseradish, mustard, honey, shallot, and thyme. Cook over high heat until it reaches a boil, then reduce to a simmer. Stir frequently for 5-8 minutes until reduced to half. Remove from heat.
- 3 Sprinkle steaks with pepper and salt. Lightly oil your grates. Grill the steak for 6-8 minutes for medium-rare, turning once during cooking. Remove from the grill and let rest for 5 minutes. Thinly slice the steak on the diagonal and serve with the sauce.
