- 1 bottle Stubb's® BBQ Rub
- 6 pound bone-in rib roast (about 3 to 4 ribs), trimmed
INSTRUCTIONS
- 1 Generously coat roast evenly on all sides with Rub. Let stand at room temperature up to 30 minutes to let roast absorb the flavor of the Rub.
- 2 Preheat your grill for indirect medium-low heat (about 300° F.). Place empty foil pan underneath grates on unlit side below roast to catch juices for basting. For extra smokiness, you can add some wood chips in a smoker box to lit side of the grill.
- 3 Place the roast with the rib side down directly on grill grates. Grill 2 ½ to 3 ½ hours or until desired doneness, turning occasionally. Internal temperature should be 115ºF for rare; 125ºF for medium rare and 135º for medium.
- 4 Remove roast from grill and baste with juices, if desired. Let stand 15 minutes before slicing.
