Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup chopped carrot
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 2 1/2 cups water
- 1 package Zatarain's® Black Eyed Peas & Rice
- 8 ounces cooked ham, coarsely chopped
INSTRUCTIONS
- 1 Heat oil in large skillet on medium heat. Add vegetables; cook and stir 3 minutes or until softened.
- 2 Stir in water, Rice Mix and ham. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until most of the water is absorbed and rice is tender. Remove from heat. Let stand 5 minutes. Fluff with fork before serving.
