Ingredients
- 1 pound boneless skinless chicken breasts
- 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons butter, divided
- 1 cup chopped onion
- 1/2 cup sliced mushrooms
- 2 cups water
- 1 package Zatarain's® Wild Brown Rice Mix
- 1/2 cup chopped pecans, toasted
- 2 tablespoons chopped fresh parsley
INSTRUCTIONS
- 1 Season chicken with garlic salt and pepper. Melt 1 tablespoon of the butter in large skillet on medium heat. Add chicken; cook 2 to 3 minutes per side or until cooked through. Remove from skillet. Set aside.
- 2 Melt remaining 1 tablespoon butter in same skillet on medium heat. Add onion and mushrooms; cook and stir 3 minutes or until golden brown. Stir in water, Rice Mix and pecans. Bring to boil. Reduce heat to low; cover and simmer 40 minutes.
- 3 Cut chicken into 1-inch cubes. Stir into skillet; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with parsley.
