Ingredients
- 1 tablespoon oil
- 1/2 cup chopped red bell pepper
- 1/4 cup finely chopped onion
- 1 cup water
- 1 cup Thai Kitchen® Unsweetened Coconut Milk
- 1 package Zatarain's® Caribbean Rice Mix
- 1 cup chopped, peeled and seeded mango
- 1/4 cup toasted coconut
INSTRUCTIONS
- 1 Heat oil in large skillet on medium heat. Add bell pepper and onion; cook and stir 3 minutes or until vegetables are tender-crisp.
- 2 Stir water, coconut milk and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
- 3 Stir in mango. Cover and cook 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Fluff rice with fork before serving. Sprinkle with toasted coconut.
