Ingredients
- 2 1/2 cups water
- 1 tablespoon oil
- 1 package Zatarain's® Jambalaya Rice Mix
- 1/4 cup poppy seed dressing
- 2 tablespoons chopped parsley
- 2 tablespoons orange juice
- 1 tablespoon honey
- 1 can (11 ounces) mandarin oranges, drained

- 1 apple, such as Red Delicious or Gala, cored and cut into chunks
- 1/4 cup sliced celery
INSTRUCTIONS
- 1 Bring water and oil to boil in medium saucepan. Stir in Jambalaya Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes
- 2 Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork
- 3 Meanwhile, mix poppy seed dressing, parsley, orange juice and honey in small bowl. Add fruit and celery to rice mixture; toss gently until mixed. Drizzle dressing over salad; toss gently. Serve immediately. Or, cover and refrigerate until ready to serve
