Ingredients
- 2 1/2 cups water
- 1 package Zatarain's® Yellow Rice Mix
- 2 tablespoons butter
- 2 cups sliced mushrooms
- 8 ounces asparagus, cut into 1-inch pieces (1 1/2 cups)
INSTRUCTIONS
- 1 Bring water to boil in medium saucepan. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender.
- 2 Meanwhile, melt butter in large skillet on medium-high heat. Add mushrooms; cook and stir 3 minutes. Add asparagus; cook and stir 3 minutes until tender-crisp.
- 3 Stir vegetables into rice mixture; mix well. Remove from heat. Let stand 5 minutes.
