Test Kitchen Tip:
· Fresh Turmeric root is similar in appearance to ginger root. It has a tough skin or peel, that should be removed before grating, chopping or slicing to use in cooking. Note that fresh turmeric may stain hands and cooking equipment yellow, much like the dried, ground powder. Find turmeric root in the product section at your local grocery store.
· Use store-bought ginger juice or make your own! To make fresh ginger juice, simply peel and grate several pieces of fresh ginger root onto a piece of cheesecloth. Wrap grated ginger in cheesecloth and squeeze to drain juice, discarding solids in cheesecloth. You can also place chunks of peeled fresh ginger in the blender. Cover and process until pureed. Then strain through a fine mesh sieve, using a spatula to press out juices. Discard pulp and use juice for cocktails, smoothies and juice drinks.
