  • Sambar Lentil Curry
  • 6 cups water, divided
  • 1 cup moong dal, (split yellow mung bean)

  • 1/4 cup finely chopped shallots
  • 2 tablespoons finely chopped fresh garlic

  • 1 cup diced eggplant, (about 1/2-inch pieces)
  • 2/3 cup sliced okra, (about 1/2-inch pieces)
  • 1/4 cup tamarind paste
  • 2 tablespoons brown sugar
  • 4 1/2 teaspoons salt
  • 1 cup chopped green beans, (about 1/2-inch pieces)
