Ingredients
- 1/4 cup flour
- 3 teaspoons McCormick® Perfect Pinch® Italian Seasoning, divided
- 1/2 teaspoon McCormick® Sea Salt Grinder
- 1/4 teaspoon McCormick Gourmet™ Organic Coarse Ground Black Pepper
- 1 pound thinly sliced boneless skinless chicken breasts
- 3 tablespoons olive oil, divided
- 1/4 cup white wine
- 4 plum tomatoes, coarsely chopped (about 1 1/2 cups)
- 1 cup chicken stock
- 2 tablespoons drained capers
- 2 tablespoons shredded Parmesan cheese
INSTRUCTIONS
- 1 Mix flour, 1 teaspoon of the Seasoning, sea salt and pepper in shallow dish. Moisten chicken lightly with water. Coat evenly with flour mixture
- 2 Heat 2 tablespoons of the oil in large nonstick skillet on medium heat. Add half of the chicken; cook 3 minutes per side or until golden brown. Remove from skillet; keep warm. Repeat with remaining chicken, adding remaining 1 tablespoon oil if necessary
- 3 Stir wine into skillet, stirring to release browned bits in bottom of skillet. Bring to boil. Stir in tomatoes, stock, capers and remaining 2 teaspoons Seasoning. Cook and stir on medium heat 5 minutes or until tomatoes are slightly softened. Spoon sauce over chicken to serve. Sprinkle with cheese
