- Jalapeño Avocado Ranch Dressing
- 1 medium avocado, peeled and seeded
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 2 tablespoons lime juice
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon McCormick Gourmet™ Organic Garlic Powder
- 3/4 teaspoon McCormick Gourmet™ Jalapeño Pepper, Ground
- 3/4 teaspoon McCormick Gourmet™ Sicilian Sea Salt
- 1/2 teaspoon McCormick Gourmet™ Organic Dill Weed
- Salad
- 1 tablespoon olive oil
- 1/2 cup frozen corn
- 8 cups chopped green leaf lettuce
- 1 pint cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- 1/4 cup shaved Manchego cheese
INSTRUCTIONS
- 1 For the Dressing, place all ingredients in blender container; cover. Blend on high speed until smooth. Set aside.
- 2 For the Salad, heat oil in medium skillet on medium-high heat. Add corn; cook 5 minutes or until golden brown, stirring occasionally. Drain corn on paper towels.
- 3 Toss lettuce, tomatoes, red onion, cheese and corn in large bowl. Serve salad with Dressing.
