Combining sweet, spicy and sour tastes with the crunchy textures of carrots and peanuts, this sauce makes a perfect accompaniment to spring rolls.

- 1/4 cup rice vinegar
- 1/4 cup fresh lime juice
- 2 tablespoons Thai Kitchen® Gluten Free Premium Fish Sauce
- 1 tablespoon palm sugar or brown sugar
- 1 teaspoon minced garlic
- 1/2 teaspoon Spicy Thai Chili Sauce, or 2 Thai chiles, seeded and minced
- 1/2 cup grated carrot
- 1/4 cup roasted unsalted peanuts, coarsely chopped
INSTRUCTIONS
- 1 MIX vinegar, lime juice, fish sauce, palm sugar, garlic and chili sauce in small bowl until well blended. Cover.
- 2 REFRIGERATE at least 1 hour. Sprinkle with carrot and chopped peanuts before serving.
- 3 Makes 1 cup.
