Peanut Carrot Sauce

Combining sweet, spicy and sour tastes with the crunchy textures of carrots and peanuts, this sauce makes a perfect accompaniment to spring rolls.

INGREDIENTS

Ingredients

  • 1/4 cup rice vinegar
  • 1/4 cup fresh lime juice
  • 2 tablespoons Thai Kitchen® Gluten Free Premium Fish Sauce
  • 1 tablespoon palm sugar or brown sugar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon Spicy Thai Chili Sauce, or 2 Thai chiles, seeded and minced
  • 1/2 cup grated carrot
  • 1/4 cup roasted unsalted peanuts, coarsely chopped

INSTRUCTIONS

  • 1 MIX vinegar, lime juice, fish sauce, palm sugar, garlic and chili sauce in small bowl until well blended. Cover.
  • 2 REFRIGERATE at least 1 hour. Sprinkle with carrot and chopped peanuts before serving.
  • 3 Makes 1 cup.
