Ingredients
- 1 tablespoon vegetable oil
- 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
- 2 cups water
- 1 cup salsa
- 1 package Zatarain's® Cilantro Lime Rice
- 1 cup shredded Mexican cheese blend
- 2 tablespoons chopped fresh cilantro
INSTRUCTIONS
- 1 Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
- 2 Stir water, salsa and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
- 3 Stir in chicken. Sprinkle with cheese. Cover and cook 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with cilantro.
