Easy Shrimp and Mushroom Risotto

Start with Zatarain’s® Creamy Parmesan Rice Mix and add shrimp and mushrooms for an easy risotto. The rice mix contains all the seasonings, including Parmesan cheese, you need for the risotto.

INGREDIENTS

Ingredients

  • 1 tablespoon butter
  • 2 cups sliced mushrooms
  • 1/3 cup chopped onion
  • 1 1/2 cups water
  • 1 package ZATARAIN'S® Creamy Parmesan Rice Mix
  • 1 pound large shrimp, peeled and deveined

INSTRUCTIONS

  • 1 Melt butter in large skillet on medium-high heat. Add mushrooms and onion; cook and stir 3 minute or until mushrooms are tender.
  • 2 Stir water and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 15 minutes. Stir in shrimp. Cover. Cook 10 minutes longer or until rice is tender and shrimp turn pink. Remove from heat. Let stand 5 minutes.
