Ingredients
- 1 tablespoon butter
- 1/2 cup chopped red onion
- 2 cups water
- 1 can (14 1/2 ounces) diced tomatoes, drained
- 1 package Zatarain's® Cilantro Lime Rice
- 1 pound large shrimp, peeled and deveined
INSTRUCTIONS
- 1 Melt butter in large nonstick skillet on medium heat. Add onion; cook and stir 2 minutes or until onions are translucent.
- 2 Stir water, tomatoes and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 15 minutes.
- 3 Stir in shrimp. Cover and cook 10 to 15 minutes longer or just until shrimp turn pink and rice is tender, stirring occasionally. Remove from heat. Let stand 5 minutes.
