Ingredients
- 1 tablespoon vegetable oil
- 1 pound boneless skinless chicken breasts, cut into 1/2-inch chunks
- 1 1/2 cups water
- 1 can (14 1/2 ounces) petite diced tomatoes, undrained
- 1 package ZATARAIN'S® Chicken Flavor Rice
- 2 teaspoons chili powder
- 1/2 cup sour cream
- 1 cup shredded Mexican blend cheese
INSTRUCTIONS
- 1 Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
- 2 Stir water, tomatoes, Rice Mix and chili powder into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
- 3 Stir in chicken and sour cream; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Sprinkle with cheese. Let stand 5 minutes.
