Ingredients
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts, cut into thin strips
- 3 cups water
- 1 package Zatarain's® Red Beans & Rice Dinner Mix
- 1 1/2 cups shredded Cheddar cheese, divided
- 1 cup salsa
- 8 (8-inch) flour tortillas
INSTRUCTIONS
- 1 Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 6 minutes or until cooked through. Remove chicken; set aside. Add water to skillet; bring to boil. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Stir occasionally to prevent sticking. Remove from heat. Stir 1/2 of the cheese into rice. Let stand 5 minutes
- 2 Preheat oven to 350°F. Divide rice mixture, chicken, remaining cheese and salsa among tortillas. Fold into burritos. Place in 13x9-inch baking dish
- 3 Bake 10 minutes or until heated through. Serve with additional salsa, if desired
