Servings: 6 (1 cup)

Ingredients

  • 1 tablespoon oil
  • 1 pound chicken tenders, cut into 1-inch strips substitution Substitutions available
    • boneless skinless chicken breasts, cut into 1-inch strips
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 package ZATARAIN'S® Rice Pilaf
  • 1 3/4 cups water
  • 1 cup shredded Monterey Jack cheese

INSTRUCTIONS

  • 1 Heat oil in large ovenproof skillet on medium-high heat. Add chicken and vegetables; cook and stir 3 minutes or until chicken is cooked through. Stir in Rice Mix and water
  • 2 Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until most of the water is absorbed and rice is tender. Remove from heat. Sprinkle with cheese
  • 3 Broil 2 minutes or until cheese is lightly browned. Let stand 5 minutes
