Ingredients
- 3 slices bacon, cut into 1-inch pieces
- 2 cups coarsely chopped kale, stems removed
- 1/3 cup chopped onion
- 2 cups water
- 1 package ZATARAIN'S® Creamy Parmesan Rice Mix
INSTRUCTIONS
- 1 Cook bacon in large skillet on medium-high heat until crisp. Remove bacon with slotted spoon; drain on paper towels. Drain fat, reserving 1 tablespoon bacon drippings in skillet. Add kale and onion; cook and stir 1 minute or until kale is wilted.
- 2 Stir water and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 25 minutes.
- 3 Stir in bacon; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes.
