Ingredients
- 1 package (16 ounces) frozen shredded hash browns, thawed
- 1 small onion, finely chopped or grated
- 2 eggs
- 1/4 cup matzo meal
- 3/4 teaspoon Lawry's® Coarse Ground With Parsley Garlic Salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Vegetable oil, for frying

INSTRUCTIONS
- 1 Mix all ingredients, except oil, in large bowl until well blended.
- 2 Pour 1/2 inch of oil into large deep heavy skillet. Heat on medium-high heat. Drop potato mixture by 1/4 cupfuls into skillet. Cook 3 to 4 minutes or until golden brown, turning once, flattening slightly with the back of a spoon after turning. Drain on paper towels. Keep warm. Repeat with remaining potato mixture.
- 3 Garnish latkes with chopped fresh parsley or chives, if desired. Serve with sour cream and applesauce.
