Ingredients
- 1 tablespoon vegetable oil
- 1 pound boneless skinless chicken breasts, cut into 1/2-inch chunks
- 2 1/4 cups water
- 1 package Zatarain's® Long Grain & Wild Rice
- 1/2 cup sliced celery
- 1/2 cup sliced onion
- 1/2 cup sliced water chestnuts
- 1/4 cup sliced almonds
INSTRUCTIONS
- 1 Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
- 2 Stir water, Rice Mix, celery, onion and water chestnuts into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
- 3 Stir in chicken; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with almonds.
