Ingredients
- 1 pound boneless skinless chicken thighs, cut into 1-inch chunks
- 1 teaspoon Zatarain's® New Orleans Style Creole Seasoning
- 2 tablespoons olive oil
- 1/2 cup sliced Spanish chorizo
- 1/2 cup chopped onion
- 1/2 cup diced red bell pepper
- 1 clove garlic, thinly sliced
- 1 package Zatarain's® Yellow Rice Mix
- 1 package Zatarain's® Spanish Rice
- 3 1/2 cups water
- 1 large tomato, chopped
- 1 green onion, chopped
INSTRUCTIONS
- 1 Toss chicken with Creole Seasoning. Heat oil in large skillet on medium heat. Add chicken; cook and stir 3 minutes. Add chorizo, onion, bell pepper and garlic; cook and stir 2 minutes.
- 2 Stir in Rice Mixes, water and tomato. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender, stirring occasionally.
- 3 Remove from heat. Let stand 5 minutes. Fluff with fork. Sprinkle with green onion.
