Servings: 4 (1 cup)

Ingredients

  • 2 tablespoons butter
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 2 1/2 cups water
  • 1 package (8 ounces) Zatarain's® Yellow Rice Mix
  • 1/2 cup heavy cream
  • 1/2 cup shredded Monterey Jack cheese
  • 1 cup baby spinach leaves

INSTRUCTIONS

  • 1 Melt butter in medium saucepan on medium-high heat. Add mushrooms and onion; cook and stir 2 minutes or until onion begins to soften
  • 2 Stir in water and Rice Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 20 minutes. Stir in cream and cheese; cover and cook 5 minutes longer or until rice is tender. Stir in spinach. Remove from heat. Let stand 5 minutes. Fluff with fork before serving
