- 10 pounds small red potatoes
- 1 package (14 ounces) Zatarain's® Seafood Pro-Boil
- 3 1/2 cups mayonnaise
- 2 cups Zatarain's® Creole Mustard
- 1 1/2 cups sweet pickle relish
- 3 cups chopped onions
- 2 cups chopped celery
- 20 hard-boiled eggs, peeled and coarsely chopped
- Zatarain's® New Orleans Style Creole Seasoning
- Chopped fresh parsley
- Chopped green onions
- McCormick® Paprika
INSTRUCTIONS
- 1 Cover potatoes with water in large saucepot. Stir in Pro Boil. Bring to boil on high heat. Reduce heat to low; simmer 15 to 20 minutes or until potatoes are fork-tender. Remove from heat. Let stand 10 minutes to allow spices to penetrate potatoes. Drain. Do not rinse so that some of the seasonings remain on potatoes.
- 2 Use a potato masher to coarsely break up potatoes. (The largest pieces should be no larger than 1/4 of a whole potato.) Mix mayonnaise, Creole Mustard and sweet pickle relish in large bowl. Add to potatoes along with onions, celery and eggs; mix well. Season to taste with Creole Seasoning. Cover.
- 3 Refrigerate until well chilled. Garnish with parsley, green onions and paprika.
