- 16 El Guapo® Tamarind Pods
- 8 cups water, divided
- 1 cup sugar
INSTRUCTIONS
- 1 Crack tamarind pods and peel to remove hard outer shell. Remove stringy membranes that are attached to inner pulp. Discard shells and membrane strings, reserving inner pulp with seeds.
- 2 Bring 4 cups of the water to boil in medium saucepan. Add peeled tamarind pulp; reduce heat to medium-low. Cook 10 minutes. Remove from heat. Remove tamarind with slotted spoon and transfer to large bowl. Set aside and allow to cool enough to handle. Stir sugar into hot water in saucepan until completely dissolved. Set aside and allow to cool completely.
- 3 Remove and discard seeds and any remaining strings from the tamarind pulp. Place pulp and cooled soaking liquid in blender container. Cover. Blend on high until completely smooth.
- 4 Place fine mesh sieve over a large pitcher. Pour pulp mixture from blender through sieve to remove any lumps or strings. Add remaining 4 cups water to pitcher, stirring to mix well. Refrigerator until ready to serve. Pour Agua de Tamarindo into ice filled beverage glasses to serve.
