Ingredients
- 1 package McCormick® Grill Mates® Chipotle Pepper Marinade Seasoning Mix
- 1/4 cup vegetable oil
- 2 tablespoons cider vinegar
- 2 tablespoons water
- 1 pork tenderloin, (about 1 1/4 pounds) cut into 1-inch chunks
- 2 cups pineapple chunks

INSTRUCTIONS
- 1 Whisk Marinade, oil, vinegar and water in small bowl. Reserve 1/4 cup for basting. Place pork in large resealable plastic bag. Add remaining marinade; turn to coat.
- 2 Marinate 30 minutes in refrigerator, or longer for more flavor. Remove pork from marinade. Discard any remaining marinade. Alternately thread pork, pineapple and peppers onto skewers.
- 3 Grill over medium heat 8 to 10 minutes or until pork is desired doneness and pineapple and peppers are tender, turning occasionally and brushing with reserved marinade. Serve with cooked rice, if desired.
